Ease: You’ve got three elements to this dish, but only one of them requires using a pan to cook with. So, all very simple!

Top Tips: if you’re looking for flavour, then choose a ground pork that has a higher fat percentage (like 20%). If you’re looking for a healthier, leaner pork mince, choose one that has around 5% fat. This will have less “flavour” but still taste good.

Would I make this again? 100% not only is it a great dinner party recipe, but it’s also great to rustle up when you’ve had a long day!

Ingredients and Substitutions

Ground pork: I love using around 20% fat pork mince for this recipe, as it adds the most flavour. But feel free to use a leaner ground pork at around 5% fat. If you’re looking for a meat alternative, ground beef, chicken, or turkey are great options. For a vegan alternative, ground tofu or a plant-based mince are good.

Seasonings: we’re using ground cumin, paprika, and oregano as our main seasonings for this ground pork taco recipe. You can also add in some chilli flakes if you like this spicy!

Garlic: fresh garlic cloves are great for this recipe. You can also use garlic granules or powder if that’s all you’ve got. I’d recommend using ½ teaspoon when frying the pork mince.

Avocado: essential for our very simple take on guacamole. If you don’t have this, you can either buy a store-bought version. Or, I’d recommend making a cilantro salsa verde to add a bit of greenery.

Red onion: for both our avocado crush and mango salsa, we’ll be using red onion which is a bit better for salads than a white onion.

Lime: to add freshness and zing! I used fresh lime juice but feel free to use store-bought.

Mango: fresh mango is best. You can also buy pre-cut store-bought mango. If you don’t have mango, pineapple is a great alternative.

Green chili: fresh green chillies to add a bit of spice. Feel free to use red chillies if you’d like!

White cabbage: for a bit of crunch and extra freshness! Feel free to omit if you don’t have it. Alternatively you could use purple cabbage or carrot.

Step 1: Place a pan on medium heat and drizzle with 1 tablespoon olive oil. Add in the ground pork followed by the garlic, paprika, ground cumin, oregano, salt and pepper. Stir and fry for 8 minutes until golden brown. Break down the pork to remove any big chunks.

Step 2: Once the ground pork has gone a golden brown, add in the tomato passata and stir to combine. Cook for another 3 minutes. Then turn off the heat.

Step 3: In a medium-sized bowl, mash your avocado. Add in the chopped red onion, ½ lime juice, and season with salt and pepper. Mix and then give it a taste and season accordingly.

Step 4: In a separate bowl, combine the sliced cabbage, mango, green chilli, red onion, and ½ lime juice. Stir, taste, and season with salt and pepper accordingly.

Step 5: Once all your elements are ready, heat up the taco shells in the microwave or for 30 seconds on each side over on the stove top (hob) in a dry pan. Then divide the avocado sauce between the tacos, top with ground pork, mango salsa, sour cream, jalapeños, and enjoy!

What to do with leftovers

Storage: Store all your ground pork taco elements in an airtight container and place in the fridge for up to 3 days. Wrap your taco tortillas in plastic wrap or place them in an airtight container too.

Freezing: you can freeze the tortilla shells and the ground pork mixture (in airtight containers for up to 3 months), but I wouldn’t recommend freezing the mango salsa or the avocado sauce.

Reheating: To reheat the ground pork mixture, place in a loosely lidded container and into the microwave for a minute or until heated through.

Can I make this vegetarian?

For sure, just replace the ground pork with either ground extra firm tofu, or a meatless alternative (I love meatless farm’s beef-style mince).

Is this recipe gluten free?

Everything is gluten free, apart from the taco shells, so make sure to get some that are gluten-free.

Can I add any vegetables to the pork mixture?

Absolutely, you could add chopped red bell pepper, mushrooms, or lentils for some legumes if you’d like.
