I’ve chosen to cook these cheesy beef taquitos in the air fryer but traditionally, they’re fried in hot hot oil! I love that they come together in just over 20 minutes. Perfect for a midweek meal.

Texture: crunchy tortilla and a soft, cheesy centre.
Taste: meatiness from the beef and then sweetness from the fried onions. We’ve also got the seasonings which add a lovely Mexican-inspired flavour. Served with a creamy avocado sauce.
Ease: once you’ve made the beef filling which is all made in one pan, you’ve just got to wrap up the taquitos and then air fry them until golden.
Top Tips: 1. if you want more flavour, use a higher fat % ground beef. Like 20%. 2. Taste the beef mixture before wrapping up the taquitos. 3. for ultimate flavour, you can deep fry them, but I just like to roast them or air fry them!
Would I make this again? yes, it’s a great easy recipe for a midweek dinner or snack!
Ingredients and Substitutions


Ground beef: we’re using ground beef for this recipe, 20% fat because we like the extra flavour. For a healthier option, you can choose 5% fat. If you’re not a fan of beef, you can use ground turkey or pork. For a vegan option, use crumbled extra firm tofu.
Onion: white or red onion, finely chopped! You can use shallots too. If you haven’t got the fresh stuff, you can use onion granules.
Garlic: fresh garlic for the best flavour, but you can use garlic granules if that’s all you’ve got.
Seasonings: we’re using chili powder, ground cumin, and paprika!
Black beans: any kind of beans work well, but I love black beans.
Tortilla wraps: wheat tortilla wraps are my preferred for this recipe but if you’d like to use wholegrain, go for it!

Step by step instructions with photos


Step 1: Place a frying pan on medium heat and add in the beef mince, chopped onions, and garlic. Fry for 5-10 minutes until slightly browned.


Step 2: Season with salt, pepper, ground cumin, paprika, and chilli powder. Add in the beans and beef broth. Stir to combine, then leave to simmer for 10 minutes until the liquid has evaporated. Season with sugar and balsamic vinegar. Taste and adjust based on your preferences!


Step 3: Get yourself a taco tortilla wrap, place down a handful of grated cheese and top with taquito filling. Wrap up the taco and repeat for all of your beef and cheese taquitos.


Step 4: Place the beef and cheese taquitos into the air fryer (or preheated oven set at 180C / 350F), spray with cooking oil, and cook at 180C for 8-10 minutes until golden.


Step 5: Meanwhile, make your avocado sauce by blending avocado, lime, olive oil, salt, pepper, coriander, garlic, and chili flakes. Taste and season according to your preferences.

Step 6: Once your taquitos are golden, remove from the air fryer or oven and plate up with your avocado dipping sauce!
What to do with leftovers
Storage: once cooled, place in airtight containers and into the fridge for up to 3 days.
Freezing: you can totally freeze these. I’d recommend freezing them before air frying or baking them. Wrap in kitchen foil and place in the freezer for up to 3 months. Leave to defrost/thaw in the fridge overnight
Reheating: You can microwave these but they won’t turn out crispy. So, I’d recommend preheating the oven to 160C / 320F and then reheating the taquitos for 10 minutes. If cooking from thawed, then cook according to my recipe instructions (180C / 350F for 10 minutes).

For sure, swap out the ground beef for crumbled extra firm tofu. Use veggie stock instead of beef broth. For the cheese, simply use your favourite vegan cheddar cheese.
